Ingredients

  • 2 Carrots
  • 2 Potatoes
  • 2 Cups Broccoli
  • 1 Large Onion
  • 2 Cups Mushrooms
  • 2 cups your favorite beans
  • 2 Cups Barley
  • 2 Tbsp miso paste
  • 1 tbsp garlic powder
  • 1 tbsp oregano
  • 1 tbsp basil
  • 1 tbsp granulated dulse

Directions

If using dried beans, soak overnight and then boil until soft (otherwise, just open a can and rinse). Simmer barley in water with miso paste until the miso dissolves and the barley is soft. Then, add the rest of the ingredients to the barley and miso in a large pot and simmer on low for 15-20 minutes. Test vegetables to make sure they are still firm (not mushy), but slightly softened. Then, turn off the heat and enjoy!
